Healthy and Green Mac’N’Cheese

Before I begin this post I wanted to start by saying that we almost never have Mac and Cheese but if we do, we always turn it into more of tuna casserole type of a dish. I always try to find a healthier option of a unhealthy dish.
For today (in honor of St Patrick’s Day and the first day of Spring) I wanted to make something fun and green. So I went ahead and came up with this little number!
It is delicious and totally kid friendly. You can hardly taste a difference and I used 3 scoops of the powdered greens. I will admit that my kiddos aren’t afraid of the color green but if you need to make it sound more fun, say it is green for spring, St. Patrick’s Day, Easter or any other fun thing you can think of.
You will need:
1 Box of SimplyNature Organic Mac and Cheese (I used a box of white cheddar and I swapped out the butter for SimplyNature coconut oil and used whole milk.)
1-3 Tablespoons of Nutritional Yeast (This is optional and I recommend starting with 1 T then work up to more. I add this for extra nutrients and extra protein. Braggs is my favorite brand and that is why I linked it.)
1 Can of tuna in water
1 Cup of Green Peas (I used frozen,)
1-3 Scoops of Shaklee Organic Greens Booster (I used 3 scoops for extra veggies and for a nice green color)

This a super quick and a somewhat healthier option compared to regular Mac’n’Cheese. Make sure you choose a brand of Mac’n’Cheese that is free of harmful ingredients, colors and preservatives or make it home made!
Start by making the Mac’n’Cheese as it says on the box.  Once the Mac’n’Cheese is finished, and while the pasta is still hot, I recommend a adding in the greens and nutritional yeast. Stir well until it is smooth and creamy. Then add in the tuna and peas. Keep it on the burner on low until everything is warm. You may need a little more milk depending on the consistency you like.
