With the holidays just around the corner, I thought it would be a good time to share a few of my favorite, yet, healthy treats!
Recently I have found that you don’t have to sacrifice your sweet tooth just because you are eating clean / healthy! There are so many amazing recipes that you can make that will satisfy your sweet tooth and yet not make you feel guilty about it later.
Today I am going to share with all of you a homemade peanut butter cup recipe that will knock your socks off! I made it for my husband (Brandon is a huge Reese’s Fan) and he loved them!
Let me tell you this, if he loves them then I know that you will too!
I didn’t even tell you the best part… There are only 4 ingredients needed to make these amazing treats.
You will need:
Mini muffin tins
Mini cupcake paper liners
FOR THE PEANUT BUTTER BOTTOMS
1 cup natural peanut butter
1/2 cup raw honey
1/2 cup coconut oil (melted/liquid)
1/2 cup vanilla protein powder (Shaklee Life Shake is my favorite)
Combined all of these ingredients into a sauce pan on low. Stir constantly until all of the ingredients are melted together. Then place the cupcake liners into the muffin tins and filling the cup up 1/2 to 3/4 of the way. Set aside in the freezer for now.
FOR THE CHOCOLATE TOPPING
1 cup pure dark chocolate (with 70% cacao powder or more)
1/4 cup organic coconut oil (melted)
Using the same sauce pan, melt the remaining coconut oil over low heat. Once the coconut oil is fully melted, brake your dark chocolate into big chunks and add them to the pan. Stir until the chocolate is completely melted. Then spoon the chocolate on top of the peanut butter mixture in the muffin tins, filling the cups up almost all the way to the top.
Place the tray in the fridge or freezer and don’t take them out until you are ready to serve.
My favorite part about these peanut butter cups is that you don’t have to feel bad about about eating them! They are packed with nutrition in each and ever ingredient.
